Here's a recipe for a dish that is not specifically Lebanese, but very delicious with toasted pita bread! Eva learned this recipe from her mother and has been making this dip for as long as I can remember. Of all the amazing dips she prepares, this is probably my favorite. This dip makes a great appetizer for a party and is easy to put together. You can also pair it with chips or crackers or with whatever else you'd like! Ingredients:
1.In a bowl, mix feta cheese, diced onion, parsley, diced tomato, a dash of salt and pepper (feta cheese is usually salty so be sure to not add too much salt), and olive oil You can choose to pair this dip with any kind of chip or cracker. Personally, nothing compares to eating this with toasted pita! To toast pita: cut into small bite-sized pieces and spread the pieces out on a baking sheet Preheat your oven to 475 degrees and place your baking sheet on the bottom rack for about 5 minutes, and then on the top rack for about 4 minutes. Ovens are different so be sure to check on your pita as it toasts. You can leave your pita in for a longer/shorter time depending on how toasted you like. If you find yourself with some leftover dip (low chance of that happening) you can add it to dough to make feta cheese manoush!
